Instructions
1. In a medium frying pan, melt butter in avocado oil over medium heat. Once formation of bubbles in butter subsides, add diced red & yellow onion. Season well with salt & pepper and stir well.
2. Once onions are translucent, about 5 minutes, add serrano peppers and stir. Pour 1 cup of sugar over top of onion/pepper mixture and allow to mix without stirring. After sugar has melted, pour 1/2 cup red wine vinegar over mixture & stir well.
3. Allow jam to reduce over medium heat, stirring often, until thick, about 20 minutes.
4. While jam reduces, place both types of ground beef in a mixing bowl. If you do not have any beef trimmings or steak to grind, you can use 1.75 lbs. of 85/15 ground beef. Add 2 tbsp. of hot horseradish and about 2 tbsp. Worchestershire sauce. Mix well but take care not to overmix.
5. Carefully form the beef into 5 roughly even balls. Then gently press the balls into burger patties about 5 inches in diameter. Place on a sheet tray or platter and place in the fridge for 5 minutes.
6. Preheat large frying pan over medium-high heat. Remove burgers from fridge. Press burgers into pan using a rubber or plastic spatula. Season with salt & pepper and allow to cook uncovered until a nice crust forms, about 5 minutes.
7. Flip burgers carefully to avoid splatter. Season with salt & pepper and cover for 2 minutes. Remove lid, add 1 slice of cheese to each burger and cover. Reduce heat to low and allow to cook until cheese reaches desired level of gooeyness.
8. Place 1 piece of lettuce to line bottom of warmed homemade bun. Place burger, then tomato, then pickles on top. Spread desired amount of onion jam on top bun and place on top of pickles. Firmly and evenly press down on burger and serve.
