Ingredients

3 cups bread flour
1 cup very warm water
1 tablespoon yeast
1.5 tablespoons sugar
1/4 cup olive oil, plus more for bowl
1 teaspoon sea salt
Sesame seeds

Equipment

Baking Sheet w/Parchment Paper
Plastic Wrap
Non-Stick Spray
Stand-Mixer w/Dough Hook
Mixing Bowl (greased)
Tea Towel
Rubber Spatula
Pastry Brush
Cooling Rack

Instructions

1. In stand mixer, combine yeast, water, sugar, and oil. Allow to sit for five to ten minutes, until frothy.

2. Add salt to flour. Turn mixer on low speed and add flour/salt mixture 1 cup at a time. Scrape sides with rubber spatula as needed. Allow to mix on low speed until smooth & shiny, about 6 minutes.

3. Form dough into a ball and place into greased mixing bowl, ensuring all sides are evenly oiled. Cover bowl with plastic wrap and a tea towel; place in a warm place and allow to proof until doubled in size (about 60-90 minutes)

4. Divide proofed dough into 2 even pieces. Split one half into 3 even pieces. Split the other half into 4 even pieces. Form each piece into a round ball. Cover with a towel.

5. Pour sesame seeds onto sheet tray. Roll each of the smaller 4 balls in seeds until all sides are covered. Roll 3 larger pieces into long 'snakes'. Roll these pieces in sesame seeds as well. Place all dough on a greased sheet tray & cover with an oiled sheet of plastic wrap or towel.

6. Leave sheet tray in a warm area and allow dough to get puffy, about 30-40 minutes. Preheat oven to 350 degrees.

7. Bake buns for 20-27 minutes, until evenly golden brown. The buns should sound hollow when tapped from the bottom. Allow to cool on a rack for 20 minutes before serving.
